SOUR BEER is beer which has an intentionally acidic, tart or sour taste. At one time, all beers were sour to some degree. Unlike modern, sterile brewing, sour beers intentionally allow wild yeast strains or bacteria into the brew. Another method used for achieving a tart flavour is adding fruit during the aging process to spur a secondary fermentation. In recent times, sour beer has surged in popularity and fantastic examples are available from around the world.
Based in Somerset, Wild Beer Co was born out of a love of fermentation, barrel-ageing and bold flavours. Known for brewing exceptional beers full of imagination and passion, Wild Beer Co uses the most modern creative techniques and ingredients while producing some of the world’s oldest beer styles.
