This 2017 Chablis Villages from the revered Louis Michel is of exceptional quality in terms of a step up in completeness and texture. Boasting complex and layered aromas of ripe white peaches, mango, citrus, apples, spring flowers and bread dough. On the palate, it's medium-bodied and plush yet retains very good mineral structure, and offers flavours of peach and apricot. The wine should be aired or decanted before tasting.

CHARDONNAY - Chardonnay is the world’s most famous white-wine grape and is widely planted across the world. Chardonnay wines offer complex aromas, often due to the use of oak during production, and they can be buttery with notes of vanilla, smoke and hints of sweet spices. A base of apple and citrus is supplemented by tropical flavours such as banana, melon, pineapple and guava in many examples, and by stone-fruits such peach, nectarine and apricot in others.
DOMAINE LOUIS MICHEL, Burgundy, France currently works with 21 hectares of vineyards, many of them Premier and Grand Cru. Until as recently as the 1980s the wines were fermented and aged solely in old oak barrels. Today, however, there is a more modern approach and all the wines are fermented in stainless steel with varying lengths of contact with the lees to add complexity. This protective approach allows for a much fresher expression of the Chardonnay grape, and crisper, cleaner wines throughout.
